A rich and complex dry Pedro Ximenez from Jerez.
Produced by PX specialists Bodegas Ximenez-Spinola this dry white wine has been made by hand picking over ripe grapes which are then fermented in French oak barrels on their skins. 30 litres of the grape must are then added each to day to ensure a slow fermentation (Fermentacion Lenta). French oak spice, raisins and prune notes on the nose lead onto a full and rounded palate with ripe stone fruit, cream and pastry flavours.
A quite unique wine with big flavours and is something a little bit special.
