In a nutshell: An excellent, racy Premier Cru Chablis from Samuel Billaud, one of the finest winemakers in the appellation.
The lowdown: For over 20 years Samuel Billaud has made some of the best wines that have recently come out of Chablis. Leaving the historic Domaine Billaud-Simon in 2009 and setting out on his own his wines have been internationally recognised, only getting better when he bought back some of his old family's winery's vineyards in 2014. This vibrant Premier Cru comes from old vines in the famous Vaillons vineyard and exudes classic precision and intense minerality that Billaud is known for. A structured, powerful and intense wine with great racy acidity coupled with a richness to the fruit and chalky finish. 2018 was a good year with Premier and Grand Crus producing age worthy wines with a classical freshness that this wine exemplifies.
When to drink: Whenever you feel like it! As a rather good aperitif, but really coming into its own with seafood, fleshy and fatty fish in particular as the acidity just cuts through. This also can be said for food accompanied with sauces such as a beurre blanc.
Samuel Billaud is one of Chablis' finest winemakers. For over twenty years he has been responsible for some of the best wines produced in Chablis. He established his own winery in 2009 and, in 2014, his estate was greatly extended when he recovered his share of the Domaine Billaud-Simon vines after the family estate was sold to Faiveley.
He makes wines from a number of vineyards across the appellation, both his own and as part of his négociant business. With all his wines the aim is to demonstrate the individual charactwr of each vineyard. He has now built a new winery in the centre of Chablis where he ferments the wines in a mixture of stainless steel vats and 450 litre demi-muids as well as using the traditional 228 litre burgundian pièces.
