In a nutshell:
Traditionally rich and ripe Chassagne Montrachet.
Jacques Carillon is latest in a long line from his family to make wine in this part of Burgundy's Côte de Beaune and whilst his domaine is quite small his wines are widely admired. This village appellation white has a comforting richness with a generous and mellow quality to the grapefruit and lemon citrus flavours. The finish is nicely extended and well balanced with a subtle creaminess of texture.
When to drink:
Fish, or poultry in creamy sauces make some of the best food pairings for this.
