In a nutshell: A rich and toasty Highland single malt distilled on the banks of the Firth of Cromarty.
The lowdown: To make this exceptionally rich 12 year old the first nine years are spent in ex-bourbon casks after which half of it is moved to ex-oloroso sherry casks to finish off. It has aromas of citrus fruits, chocolate and sweet spices while on the tongue it has a luxuriant mouthfeel with flavours of Seville oranges, dried fruits and hints of vanilla giving a splendid blend of warming and sherried flavours. At the finish notes of roasted coffee and dark chocolate come to the fore giving it a satisfyign sign-off.
Dalmore, a Highland distillery, is deep in the north of the country sitting on the banks of the Firth of Cromarty. Founded in 1839 it's Whyte and Mackay's largest and flagship distillery. Their classic style is for rich full-bodied whiskies which are fruity and chocolatey and make excellent after dinner digestifs. There are four pairs of still here which have a capacity of 4.2 million litres per annum and despite operating at near capacity pretty much most of the time the quality and character of its output remain reassuringly high.
