Savoury and rich South Australian Cabernet Sauvignon from the McLaren Vale
Mitolo is one of the established stars of South Australia. Their Jester Cabernet Sauvignon may be at the inexpensive end of their range but it really overdelivers. 20% of the fruit is left to dry - Amarone style - which adds sumptuous richness and depth. It's then aged in old French oak for 14 months before bottling and the result is a wine full of ripe cassis followed by savoury, cigar-box and somewhat earthy notes. A lovely tight spine of acidity runs through it all which balances the intense flavours really well making it all very well composed and attrractive.
When to drink:
Certainly a wine with great personality. It'll go well with roasts especially lamb.
