True, it's not seen so often as a sparkling wine, but this example from Pauletts with a gorgeous citrussy feel, lively mousse and snappy finish is a worthy addition to the ranks. It's full of classic Riesling character and complexity with rich and lively mouthfilling flavours of zesty lime and tropical pineapple along with nicely judged floral and honeyed notes. With a refreshing crispness it hits a well balanced pitch of fullness, liveliness and depth of flavour.

Paulett Wines is situated in Polish Hill River, in the heart of the beautiful Clare Valley in South Australia. The region was so named after the Polish settlers of the mid 1800s. The area is blessed with a climate ideal for premium grape growing. A long ripening season produces grapes with exceptional flavours and balance.
The estate was started by Neil and Alison Paulett in the early 1980s, with 1983 being their first vintage. Today their son Matthew, and his wife Ali, the next generation, are assuming leading roles. They have a deep respect for the land and an intimate knowledge of their vineyards with their unique and individual terroirs. With extreme care from the talented family winemaking team they are able to craft wines reflecting their 'sense of place'.
