In a nutshell: A fruit laden and rich biodynamic South Australian Cabernet Sauvignon from the McLaren Vale
The lowdown: This is made from estate grown fruit at Hedonist Wines' biodynamically run vineyard in the Willunga foothills in McLaren Vale. Once fermentation was complete it was aged for 18 months in a mix of new and used French oak. On the nose it's full of classic blackcurrant notes with a touch of grassiness which carries through to the full-bodied palate where there are hints of dark cherries, nutmeg and a touch of earthiness. Very well balanced, the grippy, dusty tannins showing touches of leather and coffee wrap things up very nicely.
When to drink: The intensity of flavours make this perfect to drink alongside something like grilled lamb cutlets with garlic and rosemary.
Based in McLaren Vale Hedonist Wines was started by Walter Clappis who has subsequently been joined by his daughter Kimberly and her husband James and it's this trio who, between them, have a wealth of experience from around the world who are responsible for the carefully crafted wines of this boutique South Australian winery.
Committed to sustainable practices their wines are made using certified biodynamic vineyards and practices. Mainly focussing on red wines their varietal wines include Shiraz and Cabernet Sauvignon plus Tempranillo and Sangiovese which are not so commonly seen in South Australia.
