In a nutshell: Elegant and poised South Australian Cabernet Sauvignon.
The lowdown: With its well judged power & pace, The Pugilist shows why Cabernet Sauvignon is the big hitter of all the grape varieties and in the Langhorne Creek area of South Austrailia it really comes into its own. Elegant & poised, yet rugged & strong, full of cassis, cigar smoke and mint, it is the epitome of the iron fist in the silken glove.
When to drink: Roast Beef is probably its ideal partner, but it's quite versatile and goes well with a whole range of other meaty dishes.
Founders Giles Cooke and Fergal Tynan, both holders of the gold standard Master of Wine qualification, met over a beer on the evening before the MW 1st year course and since then, there has been a certain inevitability that they would, one day, make wine together.
Wild & Wilder is all about good clean wines. Working hand in hand with their carefully chosen band of growers, they craft wines of excellent quality made from great fruit, grown with a lot of love by people who have a real passion for their art. For Giles and Fergal, who also make the highly regarded Thistledown Wines, being involved in and directing every stage of the process from bud burst to bottling means that all Wild & Wilder wines have been meticulously cared for from the vineyard onwards.
