In a Nutshell:
An outstanding Chablis with just the merest hint of oak by one of the region's finest producers.
The Lowdown:
Care and attention to detail is one of the hallmarks of William Fèvre and it certainly shows in their 'Domaine' Chablis. All the fruit for this wine is hand-harvested and lightly pressed to maximize freshness. A very small proportion, about 5-10%, of the wine is vinified and aged in French oak barrels which gives the characteristic Fèvre hint of creaminess to the finished wine. It has aromas of citrus fruits and green apple leading on to a dry, supple palate with vibrant fruit, mineral flavours and a fresh, clean acidity.
The Producer:
William Fevre is one of Chablis' key players, holding an impressive array of the region's top vineyards. Out of their 80 hectares, a notable 15 are Premier Cru and another 15 Grand Cru - an unmatched spread in the area. This breadth allows them to offer a diverse range of Chablis that truly showcases the region's best terroirs. Fevre's approach is all about respecting the land and letting the unique qualities of each plot shine through. Their wines are standout examples of Chablis' mineral-driven whites.
When to Drink:
An elegant yardstick by which a lot of other Chablis is measured. Chicken, creamy pasta and fish dishes are good pairings here.
