The lowdown:
Lying 30 miles north east of the city of Toulouse Domaine Gayrard has occupied its site on a limestone plateau in Gaillac for five centuries, and now the latest generation have put vineyards and wine at the forefront of the estates purpose. With a focus on local varieties and organic and biodynamic viticulture Domaine Gayrard, while old, is at the vanguard of exciting new producers in this region. This juicy and pleasingly slightly rustic red is made with the grape Braucol which is also known as Fer Servadou in Marcillac another 50 miles north east. Hand harvested from a windswept hillside plot of old vines before undergoing a traditional wild yeast fermentation and then maturing for just 6 months in concrete in order to preserve those aromas and that wonderful freshness. Fresh aromas of wild blackcurrant and berry notes with touches of spice and green pepper undertones lead onto a medium-bodied palate with soft and juicy dark fruit notes, some black pepper spice, touches of rustic earthiness and mild tannins through to a juicy, fruity finish.
When to drink:
Try with Confit du Canard or cassoulet, great with weekday dishes like sausages or cottage pie, or earthy stews in general.
