The lowdown:
Fog Mountain pays homage to the Californian mountain ranges and the colling fog, which have a huge influence on Californian viticulture. The mountains offer unique climate conditions and varied soils on which to plant vines, while the fog, with its colling effect, creates the ideal microclimate, prolonging the growing season and allowing the grapes to fully ripen. The grapes for this wine are sourced exclusively from sustainably farmed vineyards throughout California. The grapes underwent a 48-hour cold soak prior to fermentation. Fermentation took place in stainless steel tanks, followed by 10 to 15 days maceration on the skins to extract tannins and lend structure to the wine. Ageing took place predominantly in stainless steel tanks to preserve the fresh primary fruit aromas, with around 5% of the wine aged in neutral French oak barrels for 12 to 14 months, to round out the tannins. This Cabernet Sauvignon opens with enticing aromas of blackberry and bramble and a hint of spice. Baked plum, violet and elderberry flavours coat the palate, along with subtle notes of white pepper. This is a beautiful wine with well-integrated tannins and long, lingering finish.
